A great childhood memory is whenever my Japanese father served Japanese Omelette Rice for breakfast. He always wrote our names with ketchup on top of the dish which were eaten with fork or spoon.
In Tokyo, I sometimes ordered Omurice (オムライス) for breakfast instead of the traditional “morning service” served at the local coffee shop.
Inspired by the Netflix show “midnight diner”, here is a video recipe who claims to make the dish exactly as in the show:
The recipe from Just One Cookbook is as follows:
- 2-2,5 cups cooked Japanese short grain rice (360g)
- 1/4 onion (60g)
- 4 mushrooms (50g)
- 4 slices ham (80g)
- 3 tablespoons green peas (25g) (defrosted and drained, if frozen)
- 4 large eggs (2 eggs for each omurice)
- 2 tablespoons milk (1 tbsp for each omurice)
- Salt & Pepper
- 1 Tablespoon oil
- 2 Tablespoons butter (1 tbsp for each omurice)
Tomato sauce
- 3 Tablespoons ketchup
- 2 Tablespoons water
- 3 Tablespoons water
